Chocolate Chip Cookies (no refined sugar)

Ingredients:
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup coconut sugar
3/4 cup packed "brown" sugar (1c coconut sugar + 1 tbsp pure maple syrup combined)
1 teaspoon vanilla extract
2 large eggs
1-2 c Hu dark chocolate baking chipsnote: if you don't mind the refined sugar, you could replace the coconut sugar with granulated sugar, the "brown" coconut sugar with brown sugar, and the chocolate chips with any chocolate chip you like.
Instructions:1. Preheat the oven to 375°F.2. In a small bowl, whisk together the flour, baking soda, and salt. In a separate large mixing bowl, beat the butter, coconut sugar, "brown" sugar, and vanilla until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Gradually mix in the dry ingredients until just combined. Stir in the chocolate chips. Drop rounded tablespoons of dough onto ungreased baking sheets.3. Bake for 9–11 minutes, or until the edges are golden brown. Let the cookies cool on the baking sheet for 2 minutes before transferring them to a wire rack to cool completely.
